Chocolate Chip Cookies made with Coconut Flour

Eating healthy is a priority for me and now that I am finally understanding what my body needs, I like to listen to it.

As much as I like to snack on nuts and cheese, I often crave biscuits. I wanted to bake biscuits that leave me feeling satisfied and not guilty.

After doing some research I found this beautiful coconut flour biscuit recipe ( click here for original recipe). I baked these a few times, did a few tweaks and I'm finally happy with the flavours.

A little secrete about me, before my relationship I use to cook/bake because I had too. Now I cook and bake because I love it. I love experimenting with flavours as well as tasting new and exciting foods.

Most of the ingredients are normally in my pantry. For a guideline I have added the items in the "click here" section.


Ingredients:
1/3 cup coconut flour (click here)
4T butter ( I use salted for a bitter taste) (click here)
1T honey (click here)
1tsp vanilla essence (click here)
A sprinkle of mixed spice (click here)
Handful dark chocolate chips. (click here)



Method:

Preheat oven to 180 Degrees.
Add flour and butter in a bowl. Using a fork, cut the butter into the flour creating a crumble dough.


Now mix in honey, vanilla essence, mixed spice and dark chocolate chips.

Depending on thickness of the biscuit, I like it thick and chewy, I divide the mixture into six balls and flatten them between my palms before placing them on the baking sheet.

Bake for 6 minutes. If left longer they will burn. I like it slightly burnt as it adds a whole new flavour.
